Nina Lou Eggett Larsen, age 74, of Cottonwood Heights, passed away on Sunday December 15, 2024 at Abbington Memory Care. Nina was a beloved mother, grandmother, sister, and friend. She will be remembered for her love of family, her deep faith,and her passion for crafting, cooking, and camping.
Nina was born on October 9, 1950 in Bountiful, Utah to Lloyd Eggett and Lucile Burningham. She grew up helping her dad around the farm and grew a love of gardening. She also enjoyed helping her mom in the kitchen and learned how to be a wonderful cook.
Nina met Emory Harry Larsen at a 6 Stake MM Gleaner picnic and were married a year later. They were married in the Salt Lake Temple on June 12, 1970. Together, they had 5 amazing children: Jeff, Jason, Mindy, Sarah and their caboose Erik. She was a dedicated mother and a loving grandmother to her 11 grandchildren, Eden (Kyle), Chance, Brooklyn, Marley, Amelia, Lily, Ella, Luke, Blake, Quincy and Madeline.
She was a devout member of the Church of Jesus Christ her whole life and she was an active participant in church life. She loved the many callings she had at the church, like teaching all the ladies to make candy, Primary, serving at the Salt Lake Temple and other callings. Her faith was a cornerstone of her life, and she found joy in serving others.
Nina was an exceptional cook who delighted in preparing meals for her family and friends. Her german pancakes, egg gravy, deviled eggs, and delicious desserts and candies were some particular favorites of all who were lucky enough to enjoy them.
She was also an avid camper, quilter, and cross-stitcher. Whether she was camping with her family in the canyons, or spending hours creating intricate cross-stitch designs and beautiful quilts, especially baby quilts, she was always creating with love. Her quilts have been cherished by many, particularly the ones she made for newborns, which she named drag around quilts, will be a lasting symbol of her care and devotion.
Nina will be deeply missed by her family, friends, and all who had the privilege of knowing her. Her spirit lives on in the meals she made, the quilts she crafted, and the memories she created with those who loved her.
She is survived by her many siblings and her 4 children Jason Larsen, Mindy Schow (Craig), Sarah Rodney (Aaron) and Erik Larsen. She was preceded in death by her beloved spouse of 54 years, Emory, her son Jeffrey, her parents, older brother Ronald and many inlaws.
A celebration of Nina’s life will be held on Friday December 20 at 1 p.m at the Church of Jesus Christ Chapel, 2301 East Bengal Blvd, Cottonwood Heights, Utah. A viewing will be held the night before on Thursday December 19 at Cannon Mortuary 2460 E Bengal Blvd, Cottonwood Heights, Ut from 6-8pm and also at the chapel prior to the funeral from 12-12:45pm. Interim will follow at Mountain Estates. Special thanks goes to those that cared for her at both Cedarwood Assisted Living and The Abbington Memory Care. Also a huge thanks to Canyons Hospice for all of their love and support in her final stages.
Nina brought joy, warmth, and kindness wherever she went. She leaves behind a legacy of love, family, and faith that will continue to inspire all who knew her. We’ll miss you mom!!!
